Would like to wish a Happy Mothers Day 💐 to all the amazing mums in the UK.
Lunch recipe today - Cajun king prawn/shrimp stuffed avocados. These are delicious and so easy to make and suitable for those at solid stage.
Ingredients serves 2
1/2 lb (230g) king prawns/shrimps raw, thawed, peeled and deveined, 1/4 tbsp Cajun spiced seasoning, pinch of salt & black pepper to taste, 1/2 tbsp olive oil, 1 tbsp mayonnaise, 1 tbsp sour cream, 1/2 tbsp corriander (cilantro) chopped, 1/4 tsp lime juice, 1 avocado cut in half stone removed, chopped green onions for garnish
Instructions
Heat the olive oil in a pan and add the king prawns, cajun spice, and a pinch of salt. Cook over a high heat for 3-4 minutes, stirring occasionally. Remove from the pan and set aside. When king prawns have cooled, chop. Mix the mayo, sour cream, chopped corriander, and lime juice in a bowl. Add a pinch of salt and black pepper, and stir well. Add the chopped king prawns and stir. Top each avocado half with the king prawn cajun mixture. Garnish with chopped green onions and serve with a slice of lime. Serve immediately or chill for 5 minutes.

Ingredients serve 2 - 3
1/2lb/230g boneless chicken thigh or chicken breast diced, 1 cup fresh broccoli florets chopped, 3 slices bacon chopped, 1 tbsp butter, 1 tbsp almond or plan flour, 1/2 tsp salt, 2/3 cup milk, 1/3 cup shredded gruyere or medium white cheddar cheese, 1 egg whisked, 1 calorie spray oil

Instructions
Pre-heat oven to 180C/350F. Spray a medium-sized baking dish with 1 calorie spray oil. Fry the bacon in a pan until just crispy on medium-high heat. Drain the bacon on a paper towel and set it aside. Leave bacon grease in the pan. Cook diced chicken in the pan with the bacon grease until seared all over, around 2-3 minutes. In a medium-sized sauce pan, over a low heat, melt the butter. Whisk in the almond flour and salt until smooth.

Slowly add the milk and continue whisking until thickened and simmer for 1-2 minutes, then remove from the heat. Add in the chicken, half of the bacon, broccoli, and gruyere cheese. Gently mix until cheese starts to melt. Add the whisked egg and stir thoroughly. Pour into the greased baking dish and top with the remaining crispy bacon bits. Bake for 35 minutes and serve immediately.

Ingredients
8oz Shirataki konjac thin noodles (amazon), 1 tbsp sesame oil, 2 slices cooked ham finely sliced, 5oz boneless chicken thigh finely sliced, 1 clove garlic crushed, 1 small onion finely sliced, 1 stick celery finely sliced, 3oz Shrimp cooked, 2 tsp curry powder, 2 tbsp light Soy sauce, 1 bunch bok choy sliced, 2oz bean sprouts
Instructions
Prepare the shirataki noodles by placing them into a colander and running hot water over them for 3 minutes. Leave to drain.
Add the sesame oil to a wok or a large non-stick pan over high heat. Add the ham, chicken and garlic and saute for 2-3 minutes, until chicken has seared all over.
Add the onion and celery and saute for 2 minutes, stirring continuously. Then, add the shrimp and curry powder and stir to combine. Add the drained konjac noodles and combine. Cook for 2 minutes before adding the Soy sauce.

Add the bok choy and bean sprouts and toss through, ensuring all ingredients are covered in the sauce. Continue cooking for 1-2 minutes until the bok choy has softened. Remove from the heat and serve. Nutritional information per serving (serving 3)

Snack recipe (see last pic) and a bit about me - low carb, low sugar peanut butter chocolate truffles. If you fancy a treat, these are so quick and easy to make. Add a scoop of protein powder if you would like more protein. Enjoy 😋

●Ingredients (makes 12)
115g (4oz) full fat cream cheese, 1/4 cup smooth peanut butter, 2 tbsp powder sweetner, 1/2 cup keto chocolate chips crushed (amazon)

●Instructions
Soften the cream cheese and peanut butter and room temp, then mix together with sweetener. Make golf sized balls using cold hands (run under cold water and dry) to shape, avoiding sticking.
Add the crushed chocolate chips to a bowl and coat the protein balls. Cover each ball with cling wrap or place all on a tray, then into the freezer for 2 hours. You can also fully freeze and take out a few hours before serving.
